What are Spring Rolls?
To begin, let's settle the confusion of what a Spring Roll actually is. Spring rolls are a savoury, fried appetiser, and (not to be confused with Egg Rolls). Spring rolls were invented in Shanghai, China and are usually filled with sautéed shredded cabbage, mushrooms, scallions, and carrots wrapped with a delicate, thin wrapper.
How to Roll Spring Rolls?
To roll a restaurant-style spring roll, you'll need fresh spring roll wrappers and cornstarch water or eggwash. You'll also want to make sure they’re not over-filled, and wrapped tightly.
Here's how to roll spring rolls, step-by-step:
- Place the wrapper on a flat surface with one corner pointing towards you (it should be a diamond shape).
- Put about 1 tablespoon of the filling in the center of the wrapper, and spread it to make a 5cm log.
- Fold the bottom of the wrapper over the filling, rolling tightly to keep the spring rolls firm.
- Fold the sides of the wrapper over the filling. Brush the top edge of the wrapper with egg. Roll up tightly, pressing to seal the edge. Put finished rolls, seam-side down, on a plate or baking sheet until ready to cook.
