1) Mix all of the vegetables and stuffing together and mash well with a potato masher. Season well.
2) Heat a frying pan with lots of olive oil to really help the bubble and squeak turn golden. Spread the mix over the bottom of the pan and fry; keep turning until some colour starts to appear.
3) When the mix is hot pat down into the pan and continue to fry until crisp. Turn onto a plate then slide back into the pan to crisp the other side.
4) Serve with a crispy bottom, runny-yolk fried egg and plenty of brown sauce.
