Carnation's Hot Cross Bun Bread and Butter Pudding

Everyone loves a hot cross bun, and the same goes for a bread and butter pudding. Combine the two to make the perfect Easter dessert.

Method

  1. Preheat the oven to 170°c/ gas mark 3.5. ​
  2. Use 5g of butter to grease the inside of the baking dish.​
  3. Slice the hot cross buns horizontally into three layers and butter the slices. ​
  4. Arrange them in the dish, making sure they all touch the base.
  5. Whisk the eggs, evaporated milk and 200g of the condensed milk in a bowl. Pour the mixture over the buns, ensuring everything is covered. Leave to soak for 10 minutes. If you have time, leaving to soak for an hour will result in a more spongy texture.​
  6. Cover the dish with tin foil and bake in the oven for 15 minutes.​
  7. Remove the foil and drizzle the remaining condensed milk over the top with a spoon, and bake for a further 15 - 20 minutes until the condensed milk has started to bubble up and has caramelised.​
  8. In the meantime, grate some orange zest into a bowl and set aside. ​
  9. Peel the orange and slice into wedges. ​
  10. Sprinkle the zest on top of the pudding. Garnish with some fresh orange wedges and serve whilst warm.​
