1) In a small saucepan over a medium heat, combine the sugar, water, Elixir G, lemongrass and zest. Bring to a simmer, stirring frequently to dissolve the sugar.
2) Cool then chill. When ready to serve, strain the simple syrup and lemon juice into a 2L jug. Mix in the ginger ale.
3) Place a few ice cubes in 4 (0.5L) glasses. Put a 1/4 of the mint in each glass, top with a couple more ice cubes and muddle. Fill the rest of the glasses with ice, and pour in the lemonade mixture. Chug!
