Method

  1. Place the water, sugar and lavender in a saucepan and bring to a boil. 
  2. Reduce heat and simmer, partially covered, for 15 minutes. Strain and cool. Cover and refrigerate for up to a week. 
  3. Pour the syrup into a champagne glass, add the sparkling wine and serve
