Method

1) Add 30ml of the olive oil to a medium saute pan over a medium heat and add the onion, olives, peppers, garlic and artichoke. Saute until translucent. Remove and cool.

2) Add the vegetables to the beans and chickpeas and mix thoroughly. Add all the dry ingredients and the egg. Thoroughly mix all the ingredients and form into 4 patties. Cover and refrigerate for 30 minutes.

3) Add 30ml olive oil to a saute pan, heat and cook the patties for 2 to 3 minutes per side.
