1. Place the flour into a large mixing bowl. Add the butter and rub it in until it resembles breadcrumbs.

2. Add the sugar, yeast then all the spices and salt. Stir to incorporate and evenly distribute the ingredients.

3. Add the beer and begin to mix, gradually adding the milk and mix to form rough dough.

4. Add the raisins and work the dough so they are evenly distributed. Knead on a floured surface to form a smooth elastic dough. Place the dough in a bowl and cover, leave to double in size this will take 3-4 hours.

5. Line a baking tray with parchment paper. Tip the dough onto a lightly dusted surface and knead to knock out any air. Shape the dough into a rectangle. Fold the top down so it covers a 1/3 of the dough then roll tightly towards you so you have a bloomer shape with the join underneath. Tuck the sides under and sit on a baking tray.

6. Cover and leave to prove again for 2 hours.

7. Heat your oven to 180°C/Gas Mark 4. Bake the bread for 40-50 minutes until risen and the crust is a dark brown colour.

8. Cool on a wire rack. Dust with icing sugar before slicing and serving.
