Method

1) In a medium bowl, add the pork, onions, ginger, garlic, spring onions, soy sauce, sesame oil, salt and pepper. Mix together until thoroughly combined.

2) Bring 2L of water to the boil in a medium stock pot.

3) Place 1 tbsp of the mixture in the middle of a wrapper. Brush the edges of the wrapper with the egg and fold in half. Repeat with the remaining wrappers.

4) Drop the wrappers into the boiling water for 1 minute, remove, and cool individually on a cooling rack.

5) When ready for service, heat the oil in a saute pan and saute the wrappers on a medium-high heat until the skin of the wrapper is browned.
