Method
1) Preheat a grill or griddle pan to high. Place the pineapple and mango under the grill or on the griddle for 30 seconds to 1 minute or until the desired griddle marks are achieved. Allow to cool and dice.
2) In a medium mixing bowl combine the honey, lime juice, coriander and season, to taste, with salt. Add the all remaining ingredients and the pineapple and mango and toss. Leave to sit for 1 hour and serve.
