Salmon is the world’s most popular fish – and it’s easy to see why. Serving up a whole side of salmon brings the wow factor to the table and feels really special. This is a great quick-cook recipe with a super simple butter that creates a gorgeous nutty brown sauce for the salmon. It’s just the thing for proper posh fish and chips!

Step 1
Preheat the oven to 200°C fan.
Step 2
Line a large oven tray with greaseproof paper.
Step 3
Place the butter into a small saucepan and cook over a medium heat until the butter melts and turns a golden nutty brown. Remove from the heat and stir in the lemon zest. Quickly add the lemon juice to stop the cooking process and set aside to cool.
Step 4
Season both sides of the salmon with salt and pepper. Stir the butter well so that all the delicious nutty brown bits in the butter are evenly distributed. Brush the underside of the salmon with a little butter and lay the salmon on the lined tray. Spread the remaining brown butter on top evenly.
Step 5
Place the salmon in the fridge until you are ready to cook it.
Step 6
When you are ready place the salmon in the oven on a high shelf for around 15 minutes. Remove from the oven and transfer to a serving plate.
