The easiest potato side dish you could ever make- and it's the perfect accompaniment to Tom Kerridge's Speedy Roast Lamb.

- Place the potatoes into a saucepan. Sprinkle with salt and add 6 whole sprigs of mint to the pan. Cover with water and then place over a high heat and bring up to the boil. Lower the heat and simmer gently for 15 minutes or until the potatoes are tender.
- Put the butter and olive oil in a small saucepan and heat gently until the butter has melted, then remove from the heat.
- Drain the potatoes through a colander and place them in a bowl. Roughly chop the remaining mint leaves. Then pour the butter and oil mixture over the potatoes. Sprinkle over the mint, dill and chives and mix well.
- Pour into a serving bowl when ready to serve.
Tom's Tip: Adding fresh mint to the water when boiling the potatoes means they take on lots more minty flavour.
