The easiest potato side dish you could ever make- and it's the perfect accompaniment to Tom Kerridge's Speedy Roast Lamb.

Ingredients

Method

  1. Place the potatoes into a saucepan. Sprinkle with salt and add 6 whole sprigs of mint to the pan. Cover with water and then place over a high heat and bring up to the boil. Lower the heat and simmer gently for 15 minutes or until the potatoes are tender. 
  2. Put the butter and olive oil in a small saucepan and heat gently until the butter has melted, then remove from the heat.
  3.  Drain the potatoes through a colander and place them in a bowl. Roughly chop the remaining mint leaves. Then pour the butter and oil mixture over the potatoes. Sprinkle over the mint, dill and chives and mix well.  
  4. Pour into a serving bowl when ready to serve. 

Tom's Tip: Adding fresh mint to the water when boiling the potatoes means they take on lots more minty flavour.
