This is Tom Kerridge's take on Fattoush, a Middle Eastern bread salad with lots of fresh, vibrant ingredients that perfectly accompany a barbecued Sunday lunch. Zaatar is a mixture of oregano, marjoram and sesame – a classic flavour combination.

Method
- Preheat the oven to 180C fan.
- Tear the flatbread into bite size pieces and in a large bowl, drizzle over the olive oil and sprinkle with the zaatar.
- Mix together with your hands so that the bread pieces are evenly coated. Bake in the oven for 8-10 minutes until nice and crispy. Leave to one side to cool.

Chill in the fridge until you are ready to serve.
- To make the dressing, combine all the ingredients in a small bowl and mix thoroughly to combine. Set aside until you are ready to serve.
- When you are ready to assemble the salad, remove the bowl of salad ingredients from the fridge, add the dressing then mix well and season to taste. Add the herbs and the flatbread pieces, mixing gently to combine, then spoon into a serving bowl.
