Method

Prepare your BBQ with some coals. While the coals are heating, prepare your butter.

Place the butter into a bowl and add the herbs, lemon juice and some salt and pepper. Divide the butter onto the scallops. 

When the coals are hot and ready, place the scallops in their shells directly onto the grill of the BBQ. When the butter melts and begins to bubble, turn the scallops over and cook for a further minute or two on the other side. Drizzle each scallop with a bit of vermouth and let it bubble away for another minute. 

Remove the scallops from the BBQ and serve onto a platter. Enjoy with some crusty bread alongside to dip into the delicious buttery juices.
