Tom Kerridge's Watermelon, Mint & Chilli Salad

For the Dressing:
Method
- Cut the watermelon into 4cm chunks and add to a large mixing bowl with the radishes, cucumbers, chilli and spring onions.
- For the dressing, mix in a separate bowl the lime juice, ginger, rice vinegar, soy sauce, sesame oil and palm sugar.
- When you are ready to serve, pour the dressing over the fruit and vegetables, mix well and transfer to a serving bowl. Add the mint leaves and sprinkle over the sesame seeds before serving.
