Seasoned to perfection and presented with a side of fresh oysters, these Bloody Marys will help you to serve with panache. Taken from the show Marcus Wareing at Christmas.

Method

Step 1

Add a handful of ice cubes to a large class jug. Allow them to chill the jug and then remove.

Step 2

Pour in the tomato juice, fill your jug so it is ¾ full.

Step 3

Pour in your vodka and sherry, and taste, add more vodka and sherry if you wish.

Step 4

Season with Worcestershire sauce, Tabasco, celery salt, and horseradish.

Step 5

Stir vigorously until well mixed, add some lemon juice. Set aside.

Step 6

To garnish your glasses; add celery salt and sea salt into a small shallow bowl and mix.

Step 7

Whisk the egg white of one egg into a small dish.

Step 8

Dip your glasses into the egg whites and then to the celery/salt mix; this will create a rim around your glass (similar to the ones you see on Margarita Cocktail glasses).

Step 9

Add ice into each glass and then add your Bloody Mary mix, season with pepper.

Step 10

Finish each Bloody Mary with a stick of celery.

For the Oysters: Step 1

Mix the red wine vinegar with the chopped shallot and set aside.

Step 2

Shuck your oysters carefully using an oyster knife. Serve on a large plate of crushed ice or salt.

Step 3

Spoon some of the shallot vinaigrette onto the oysters, and finish with a dash of Tabasco sauce (optional) and serve.
