Garnished with gold leaf, this airy chocolate mousse is a light, luscious dessert to serve post-dinner. Taken from the show Marcus Wareing at Christmas.

Step 1
Put the cream in a saucepan, with the honey and vanilla extract and bring just up to the boil.
Step 2
Put the chocolate pieces into a bowl and add the scolded cream mixture to it. Slowly stir before adding in your egg yolks and stir again to combine.
Step 3
In a separate clean and grease-free bowl, whisk the egg whites until they form stiff peaks. Add the sugar and mix until you reach stiffer peaks.

4. When your chocolate has cooled to room temperature, use a spatula to fold a quarter of the whites into the chocolate mix. Once incorporated, you can add the rest, again folding everything together gently.
Step 5
Divide the mix among 4 martini glasses and chill for at least 2-3 hours, or overnight if possible.
Step 6
Take it out of the fridge 20 minutes before you want to serve, grate chocolate and add some gold leaf for that final, Christmas touch.
