Marcus Wareing's Christmas Pudding Eton Mess
Looking to make use of your left over creams and puddings? Try these meringue nests with ice-cream and cinnamon cream, taken from the show Marcus Wareing at Christmas.

Step 1
Place the cream and a generous pinch of cinnamon into a large bowl and whisk until it just reaches stiff peaks (make sure you do not over-whip it).
Step 2
Roughly chop up the pistachios and break up the left-over Christmas puddings.
Step 3
Add a teaspoon of cream to each of your 4 serving plates and place a meringue nest on top of it. Next, add some of the broken up Christmas pudding and a teaspoon of whipped cinnamon cream, followed by a sprinkling of pistachios on top.
Step 4
Remove the ice cream from the freezer and add four large scoops of it to a chilled bowl, mix in the remainder of the left over Christmas pudding and scoop it on top of the meringue nests, followed by a spoonful more of the cinnamon cream onto each one.
Step 5
To garnish; crush up the left-over meringue and sprinkle on top of your pudding with the remaining pistachio nuts and a little dusting of cinnamon. Serve immediately.
