Marcus Wareing's Oaty Pancakes with Berry Compote and Maple Bacon
What better way to kick off Christmas Day than with a platter of palatable pancakes with berry compote and maple bacon? Taken from the show Marcus Wareing at Christmas.

Method
Step 1
To make the pancakes, bring the milk to a simmer, add the vanilla pod and seeds, the rolled oats, salt and allspice. stir occasionally for 5-6 minutes. The final consistency should be soft. Transfer to a mixing bowl and allow to cool.
Step 2
Meanwhile, make the compote. Place the cherries, blackberries and redcurrants in a medium saucepan with sugar and cardamom pods. Cook over a medium heat for around 10-15 minutes until thickened and remove from the heat. Remove the cardamon pods before serving.
Step 3
To cook the bacon, heat a large non-stick frying pan with a little oil and add the bacon, with a good drizzle of maple syrup. Cook for a couple of minutes on each side until crisp then remove the bacon to a plate. Wipe the pan clean, ready for cooking the pancakes.
Step 4
Break the eggs into a bowl, whisk and pour into your oat mixture a bit at a time, give the mix a good beat. Add a pinch more allspice to taste.
Step 5
Return the pan back to a medium heat. Add a good drizzle of oil to the pan. Once hot and foaming, add a spoonful of the pancake mixture; this is the pancake you test with; to ensure the pan is at the right heat and your pancakes are the correct consistency. Next add spoonful's of the oat mix and cook for about 4 minutes on each side, until golden brown. Remove from the pan and keep hot. Continue adding the pancakes, to make 8 in total, adding more oil if needed. Repeat until you've used all the batter.
Step 6
Serve the pancakes warm, with the compote and bacon on top.
