Marcus Wareing's Asian Inspired Turkey Salad
Turkey leftovers have never tasted so good- mix them with shredded cabbage and chilli for a tasty bowl of turkey coleslaw. Taken from the show Marcus Wareing at Christmas.

Step 1
To make the dressing, heat 2 tablespoon of sesame oil in a frying pan over a medium heat.
Step 2
Add the onion, garlic and ginger and cook for 5 minutes, stirring occasionally, until softened. Season with pepper. Stir in the peanut butter, remove from the heat. Transfer to a large bowl, add the sweet chilli sauce, rice wine vinegar and fish sauce.
Step 3
In a large bowl, toss together the grated carrots, cabbage, bean sprouts, thai basil, coriander, mint. Drizzle over the sesame oil and season with salt and pepper. Add the cucumber, chilli and peanuts and mix well.
Step 4
Finally, add the turkey meat to the salad, pour the dressing on top and toss to coat. Garnish with peanuts and thai basil to serve.
