A cheesy, boozy spread lathered on lightly toasted bread, and always grilled until golden. Enjoy a Welsh Rarebit for a Boxing Day treat, taken from Marcus Wareing at Christmas.

Ingredients

Method

Step 1

Pour the ale in a medium saucepan and place over a low heat. Add the grated cheeses, the mustard, and the Worcestershire sauce. Stir for around 5 minutes until the cheese has melted.

Step 2

Add the flour and cook gently for another 5 minutes, stirring frequently. Beat until you have a thick, creamy mixture. Add the beaten egg, remove from the heat and beat until smooth.

Step 3

Toast your bread lightly on both sides using a toaster or grill.

Step 4

Pre-heat the grill to high.

Step 5

Divide the green chilli between the 4 slices of toast then spread the rarebit mix evenly on top of each. Place the toast on a baking tray and grill until nicely golden. This should only take a few minutes, so don't leave them unattended. Serve straight away with a green salad alongside.
